Applesauce Cake

As I have explained in the past, cooking has always been fun for me. I enjoy it and love it when others are able to enjoy what I have prepared for them. Jon has eat everything I have put in front of him, even if it didn’t look or taste the greatest…and it hasn’t killed him yet. 😉

Around the time of our wedding (3 months ago tomorrow! — time flies!), my mother-in-law gave me a cookbook: 101 Things to Do with Cake Mix. As someone who doesn’t just love to cook but also loves to bake, I was quite intrigued. Cake mix is mixed with eggs, oil and water before poured into a pan of your choice and baked according to package directions. That’s all. Well, mind has been changed. Although I have only tried a handful of the recipes, they have all turned out great and I am (well, we are) excited to try out more!

For this recipe, here is what you will need:

  • 1 box of spice cake mix
  • 2 cups of applesauce
  • 1/4 cup of vegetable oil
  • 2 eggs
  • 1/4 cup of wheat germ (optional — you won’t taste a difference, it is just a good source of omega-3’s and vitamin E…among other things)
  • 1 can of frosting (optional, but good — we used cream cheese)

First, preheat the oven to 350 degree. Now that you have everything together, mix the cake mix, applesauce, oil and eggs together until well blended. Mix in the wheat germ if you want to add it in. Pour the batter into a 9×13 pan that has been greased. Put the pan into the oven for 35-40 minutes. Check the cake to see if it is done by inserting a toothpick near the center. If it comes out clean, it’s ready. If not, give it another minute or two. Once it’s out of the oven, allow it to cool for 10 to 20 minutes before adding any desired frosting.

We have been enjoying this cake for the better part of a week around here. It’s still just as delicious!
