French Toast Muffins

Another delicious-yumminess that made an appearance at our breakfast for dinner last weekend was French Toast Muffins. I LOVE French toast. Love it. Love it. Love it. These ended up being pretty good, I must say. I tried to go a little off-script with the recipe which has made them a little interesting…but not all-together bad. Here’s what the yumminess looked like on the plate before it was promptly gobbled up:

If you want to change up your usual “breakfast for dinner” routine, or try something new for your weekend breakfast, give this recipe a shot.

What you’ll need:

  • 1/3 cup of butter, melted
  • 1/2 cup of sugar
  • 1 egg, preferably room temperature
  • 1 1/2 cup of all purpose flour
  • 1 1/2 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of nutmeg
  • 1/2 cup of milk

For the topping:

  • 1/2 cup of sugar
  • 1/2 cup of butter, melted
  • 1 teaspoon of cinnamon

What you do:

Preheat oven to 350 degrees. In a medium-large bowl, sift together all dry ingredients. Add wet ingredients and stir until combined, but still a bit lumpy. Don’t over-mix. Scoop batter into muffin tins that have sprayed with cooking spray. I used an ice cream scoop to distribute the batter between the muffin cups. I was able to have 12 nice sized muffins by doing this. Bake for 20-25 muffins, or until they just start to turn a bit golden at the edges. For the topping, mix sugar and cinnamon in a small bowl. Place melted butter in another small bowl. Dip the warm muffins in melted butter, then in cinnamon sugar.
