Pumpkin Muffins

A friend who has lived in the north, south and here in North Carolina says we “do it right”, in terms of the seasons…because we actually have them! You actually get to enjoy each of the seasons for some length of time, instead of just a weekend. Although we have had some rather large swings in temperature lately, we make Fall look good here. You know…a palate of warm-colored leaves that dazzle the trees, colorful walkways as the leaves decide to gently glide to the ground, flocks of birds singing as they fly south for the winter, pumpkins adorned with lively faces decorating the front stoop of every home, thoughts of Thanksgiving meal preparations, the scent of pumpkin filling the air…

Pumpkin…

Pumpkin is delicious. I enjoy baking. And putting the two together is…well…fabulous. And I happen to have a recipe to share with you for some delicious pumpkin muffins!

Here is all you need:

  • 15 ounce can of pumpkin puree (not pumpkin pie mix)
  • 1 box of yellow cake mix

To make them:

  • Mix the cake mix and pumpkin in a large bowl (it will be thick, but just make sure it’s mixed well)
  • Fill muffin cups 2/3 full (should yield between 12-18 muffins)
  • Bake at 350 degrees for 20-25 minutes

And there you have it! You can also add chips if you desire (cinnamon, chocolate [white/milk…], butterscotch) to add a different flare to the muffins. About 1/2 cup should do and you just stir them in with the mix and pumpkin.

These are tasty and delicious and a great snack! They are great because they require only two ingredients and are so easy to make. Grab a mug of hot chocolate (or apple cider if you prefer) and a fresh pumpkin muffin and enjoy!
